About the job

Key Duties
• To assist the Executive Chef in writing standard recipes which allow the restaurant to run at an acceptable food cost.
• To assist the Executive Sous /Executive Chef in minimizing payroll costs by maximising productivity and efficient scheduling of employees
• To monitor all kitchen operation costs and take corrective action where necessary to reduce expenses in liaison with Executive Chef.
• To support the other Sous Chefs in their day-to-day tasks.
• To assist the Executive Chef in developing menus, buffets and ‘specials’ which meet the needs of the customers.
• To use, where possible, locally and seasonally available products in menus and ‘specials’.
• To check all stores (ordered previous day) are received and issue them to each party.
• To check and ensure highest quality and freshness of food/product.
• To check with the colleague cook, when required, that meals are prepared correctly.
• To check all fridges, mis en place at each station at beginning and end of each shift/service including quality of stocks, etc. and report to the Executive Sous Chef.
• To check all fridges and storage areas to make sure previous day's leftovers are being used in the correct way.
• Instruct and demonstrate all new dishes to colleagues.

Operational
• To always co-operate and assist other stations when they are busier than you.
• To assist in writing and updating the relevant section/s of the Departmental Operations Manual.
• To prepare and submit the purchase order for the kitchen.
• To check all preparation is going correctly following standard recipes and sizes.
• To supervise the preparation of operating equipment and order any silver from Stewarding.
• Report to Executive Chef /Executive Sous Chef on daily running of the kitchen
• Organise your work to achieve the standards of customer service.
• To ensure strict adherence to manufacturers’ instructions of safe use of all equipment and understand any risks involved of operating machinery and other equipment. Request training from superiors for any new tasks.
• To be responsible for food cost in the kitchen.

Administrative
• To write Rota’s in accordance with the Hotel business
• Ensure Timesheets and Holiday reports are correctly processed.

• Ensure a high degree of personal skills, accuracy, attention to detail and positive attitude.
• To report for duty punctually wearing the correct uniform. To maintain a high standard of personal appearance and hygiene and adhere to the hotel and department grooming standards.
• To provide a friendly, courteous and professional service at all times.
• To maintain good working relationships with your colleagues and all other departments.
• To ensure you read the hotel's employee handbook and have an understanding of and adhere to the hotel's rules and regulations and in particular, the policies and procedures relating to Fire, Hygiene, Health and Safety.
• To comply with local legislation as required.
• To respond to any changes in the department as dictated by the needs of the industry, company or hotel.
• To be flexible and extend job duties to carry out any other reasonable duties and responsibilities within the job capability as assigned by management, including redeployment to alternative departments/areas if required, to meet business demands and guest service needs.
• To attend training and meetings as and when required.
• To assist in maximising productivity for the Department.
• Ensure strict control is adhered to when receiving and returning keys and whilst in their possession.
• Reports any incidents, complaints, suspicious persons or safety hazards immediately.
• Is fully aware of their work schedule and ensures adequate notice is given with circumstances when they are prevented from adhering to the schedule.
